Porridge, egg and peas – the breakfast bee’s knees

So, if you’re looking for a new idea to surprise your breakfast buddies, blogger Andrea von Fruitysky has just the thing: Poached Egg on Leek & Onion Porridge. Read on to find out how to whip up this quick and easy breakfast.



Serves 2

1 sachet Verival Leek & Onion Porridge (80g)
2 eggs
Handful of cooked peas
3 tbsp vinegar
Seasoning to taste


Place 80g of Leek & Onion Porridge in a bowl and pour over approx. 160 ml of boiling water. Stir well and leave to soak for 3 minutes. Meanwhile, bring 1 litre of water to a gentle boil in a saucepan, then add the vinegar. Crack each egg into a separate cup and then carefully slide into the water one by one. The poached eggs will be ready in approx. 2 minutes.

Divide the porridge between two glasses, season the cooked peas and sprinkle over the porridge, then top each portion with a poached egg.  Season to taste, and voilà – breakfast’s ready!
